Chiles Rellenos with Salsa Verde Cream Sauce

Ingredients:
• 1 pound beef roast
• 2 tablespoons beef bouillon
• 6 fresh poblano chilies
• 1 clove garlic, minced
• 1 medium onion, chopped
• 1 tablespoon olive or vegetable oil
• 1 cup HERDEZ® Salsa Casera
• 1/4 cup chopped ripe olives
• 1/3 cup golden raisins
• 1/3 cup slivered almonds
• 1 cup Herdez® Salsa Verde
• 1/4 cup sour cream

Place the meat in a large saucepan or stockpot. Add enough water to cover and stir in beef bouillon granuales. Bring the water to a boil. Reduce heat, cover and simmer for 2 hours or until meat is tender.

Meanwhile, cut each pepper in half lengthwise. Remove the seeds and membranes from the peppers. In a saucepan, cook peppers in boiling water until crisp-tender, about 5 minutes, drain well and set aside.

Remove cooked meat from the pan and chop into small pieces and set aside.
Discard the bouillon mixture form the pan and dry the interior. Add the oil to the same pan and heat over medium heat. Add the onion and garlic and saute until softened, about 5 minutes. Add the HERDEZ® Salsa Casera and simmer for 3-5 minutes. Return the meat to the skillet. Stir in the olives, raisins and almonds. Season the meat mixture to taste with salt.

Spoon the meat filling into each of the pepper halves and place the peppers on a lightly oiled baking pan. Bake at 400 degrees F for 10-15 mintues or until warmed through. Meanwhile, in a blender or food processor, combine the HERDEZ® Salsa Verde and sour cream. Drizzle the sauce over the prepared peppers and serve.

Panuchos

Ingredients:
• 8 fresh yellow corn tortillas
• oil for frying tortillas
• 1 cup refried beans
• 3 cups shredded rotisserie chicken
• 1 cup HERDEZ® Salsa Casera picked red onion or fresh diced red
onion
• 1 avocado, peeled, seeded and sliced

Heat oil in a large heavy skillet until hot. Fry corn
tortillas, one at a time, until slightly puffed. Place
tortillas on paper towel lined baking tray and place
in a 200 degree F oven. Spread each tortilla with
about 2 tablespoons of beans. Top with chicken.

Fiesta Lime Tacos Recipe
Ingredients:

  • 4 Tbsp. Mrs. Dash® Fiesta Lime Seasoning Blend
  • 1 lb. lean ground beef or turkey
  • 3/4 cup water
  • 12 taco shells or flour tortilla (6-inch)
  • Assorted Toppings: shredded lettuce, chopped tomatoes, shredded cheese, salsa, sour cream

Directions:

  1. Brown ground beef or turkey in a skillet on medium-high heat. Drain excess fat.
  2. Stir in Mrs. Dash® Fiesta Lime Seasoning Blend and water.
  3. Bring to boil. Reduce heat and simmer 5 minutes, stirring occasionally.
  4. Spoon into warm taco shells or tortillas. Serve with toppings if desired.

Cherry Tomato and Watermelon Salad

Ingredients:
  • 1 Tbsp. Mrs. Dash® Fiesta Lime Seasoning Blend
  • 1 pint cherry tomatoes cut in half
  • 1 1/2 cups 1 inch cubed yellow or red seedless watermelon peeled, cut into 2 inch cubes
  • 1 avocado, cleaned and cut into 3/4 inch cubes
  • 1 cucumber, peeled, seeded and cut into halves, then into 1/2 inch pieces
  • 1 Tbsp. each fresh tarragon, basil, cilantro chopped coarsely
  • 2 Tbsp. olive oil, extra virgin if possible
  • 3 Tbsp. balsamic vinegar
Directions:
  • Lightly toss all ingredients including Mrs. Dash® Fiesta Lime in medium size bowl.
  • Rest in refrigerator for 30 minutes for flavors to marry.
  • Spoon into four bowls, adding remaining juices over the top of the salad ingredients.

Watermelon Mango Margarita
This is the best margarita ever! Smooth, cold and full of flavor. Just add sun and a sparkling pool of water.
Ingredients:
2 cups chopped seedless watermelon
One ripe mango
Juice from 2 fresh limes
1 tablespoon sugar
1 tablespoon triple sec
2 jiggers tequila
2 cups ice
Instructions:
Place all ingredients (except the sun and pool of water!) in a blender and puree until smooth.
Servings:
Makes 2-3 servings

Watermelon Agua Fresco

Ingredients:
6 to 8 pounds seedless watermelon, cut into chunks
2 cups cold water
1 tablespoon freshly squeezed lime juice
1 tablespoon honey – to taste
Ice cubes
Lime wedges and watermelon triangles for garnish (optional)

Instructions:
Blend half the watermelon pieces with 1 cup of water until smooth. Strain into serving pitcher. Repeat the process with the remaining watermelon and water.  Add lime juice and honey to taste.  Stir under blended.  Pour into ice-filled glasses and garnish with watermelon triangles topped with lime wedges.
